My son Henry got a deep fryer for Christmas and we had some sweet potatoes laying around so we broke it out and went for it! It was a snow day and my son had the day off from school. We hadn’t had breakfast so what the heck! Well, we finally got it right on the fifth try!
We read you need to soak the sweet potatoes in water and then dry them and coat with cornstarch.
The first batch had way too much cornstarch and were burned, gross!
Next batch: We tried cooking them less, still too much cornstarch. Better.
Next batch: Lighter on the cornstarch but cooked too long.
Next try: very light cornstarch and shorter time in the oil. Still need to cook less. I have eaten a little too many by this time.
Last try: Perfect!
Now it’s time for breakfast! I served these like a breakfast potato with an attempt at a crispy fried egg that I learned about on Smitten Kitchen. Not my best. I have made better ones since. We made it fancy with my homemade pesto and a roasted tomato just for fun. Henry has fun in the kitchen as much as I do!
