This was a first for me! Henry and I have been eating a lot of tacos with all the taco meat I have. That smoked Spanish paprika was so good I had to make more of it. But I ran out of the corn tortillas even though I had everything else. We were snowed in for the weekend so Henry asked if I could make a burrito with an egg wrap instead of a tortilla. What a smart idea! Henry is so out of the box! I love it! I took 3 eggs and a little water and made a large egg crepe. It totally held together. It was perfect. Then I started making a burrito like I normally would. I couldn’t believe it! So fun! It tasted really good, too!
