Smashed Potatoes copied from Umami Burger

Umami Burger is where I first tasted these.  I wasn’t sure what a smashed potato is then.  This is it!   All you do is boil little baby potatoes in very salted water with the skin on until they are very soft.  Drain and once they are not too hot, smash them between the palms of your hands.  Not too hard though, just enough to burst the skin a little and flatten a bit.  Then you sauté in olive and salt and pepper until they brown and crisp a little.  So easy!  When they are dipped into a mayo/ketchup/sirracha based sauce they are amazing but they are good plain, too.  You can also boil the potatoes ahead of time and store in the fridge and smash and cook them later.  Still turns out great!
