My son found this fun silicone pan that makes diamond shapes. I made some oatmeal cookies in the pan and filled two cookies with vanilla ice cream and refroze them in the pan. The next day I popped them out and I drizzled them with a melted dark chocolate bar. It was really good and reminded me of the It’s It ice cream sandwiches I would eat when I was younger.
