This is a clean out the cupboards type of day but they turned out great! I was trying to get more room in the cupboard and had so many partially used bags of different nuts and dried fruits used for various recipes. I cut up a fresh apple, added dried apricots, dried cranberries, pecans, cashews, sunflower seeds, almond slivers, cleaned out an extra jar of peanut butter and another jar of honey. I sprinkled it over some Trader Joes whole wheat dough that wasn’t being used after I spread some butter over it. I sprinkled the filling generously with cinnamon. Then it was rolled up and sliced and put into muffin tins. I made so much filling that I decided to mix in some oats to make granola with the leftovers. I started to think, “what am I doing? this is all going to be a big waste!” Surprisingly the “trail mix” rolls were really good as well as the granola! I liked the peanut butter in it and the fresh apple in them. It was rich but still healthy with only honey as a sweetener and not a lot of added butter or fat just the nuts. I froze the rolls that weren’t eaten and they even tasted great reheated later. They were dense and flavorful but good with a coffee pour over.
